The sophisticated yet warm and welcoming ambiance at The Logis de St. Vincent extends into our two restaurant dining rooms (which seat up to 35), and above all into the repertoire of the resident Chef, Marcel van der Sluis.
Having trained in some of the most highly-regarded restaurants in France, ('The Hotel Saint-James' in Paris, 'Les Prés d'Eugénie', and 'Michel Guérard' at Eugénie-les-Bains), Marcel, like a maestro in any artistic field, will weave his magic and create individual dishes for each of his guests, magnificent combinations of aromas, flavours and colours, and all soundly-based on the best gastronomic traditions.
Try the chicken-liver terrine stuffed with prunes, or the foie gras with honey, perhaps the ' fondant de volailles farci aux cèpes', or the 'confit de canard with hand-harvested salt', and maybe in doing so you will realise that you are discovering 'the art of living', Landes-style!
Throw in a selection from the wine list featuring many regional wines, and of course not forgetting our Armagnacs, and Marcel's selection of dishes for his menus, ever-changing throughout the year to reflect the rhythm of the seasons and the availability of only the freshest produce from the local markets, will continue to surprise you, time and time again
